Core expertise is in the areas of biopolymers, particularly polysaccharides and sugars. In addition to applications based around gelation and thickening in high water environments, low water systems are of interest. For example: sugar and biopolymer glasses, water partition in products, crystallization, extrusion processing have all be studied extensively. Control of product stability, where this is limited by water loss or migration between phases, has been an important theme of our work.
Through agreement with the University of Nottingham, the company has access to an extensive range of equipment so is able to support opinion with experimental data.
